Try it Tuesday, lentil soup and homemade Muesli bars.

In a break from the fledgling tradition of try it Tuesday, today I went for a lunchtime recipe, quick lentil soup. This is another recipe from Rose Elliot’s Mother, Baby and Toddler Book: A Unique Guide to Raising a Baby on a Healthy Vegetarian Diet

, a book that was heading for the charity shop, but has actually proved rather a treasure. The recipes are straightforward, with a lack of overly exotic ingredients and while I’m sure there are more complicated ones, the two I’ve tried have been quick and easy. Lentil soup really did only take half an hour, and as I froze two portions after lunch, very economical too. Tasted a bit thin, will have to work out what I can do about that, but am sure it was very good for me.

At tea time Big decided she wanted to bake, so I got her to do homemade Muesli bars from utterly scrummy. I think it was a slightly different version of this recipe, or I misread it. Anyway, we didn’t add any extra fruit, but our luxury Muesli was pretty fruity anyway. And when it came down to it, we had evaporated milk instead of condensed, but it all seemed to work pretty well. Kids didn’t like it but that’s nothing new. Dp and I ate it still warm with icecream and it was lovely 🙂

I am quite impressed with myself for trying more new recipes, I don’t find cooking easy but I do seem to be growing in confidence. Next week in the tent on my own with four children may be challenging though…
