Coming out of the leisure centre tonight I noticed that a row of shops that’s been empty since we moved here is in the process of being turned into a Domino’s pizza. I remarked on this and Big said she wasn’t interested as my homemade pizzas have spoilt her, and she doesn’t like shop ones any more.
Aww. So obviously we had to have pizza for tea tonight 🙂
The recipe I use is one I got off twitter, obviously. 250 ml water, 15 ml olive oil, 450 g plain flour, tsp yeast, salt, sugar. Except I tend to trim down the salt slightly. Bung it all in the breadmaker and leave it to make dough, usually on a Tues while we’re out at swimming lessons. Then I use a tin of tomatoes that I reduce down in a pan while I’m rolling out the dough – I make two big tray pizzas so that we can have a variety of toppings.
Small likes his with just cheese. I use a value cheddar and half of a mozzarella ball. Other half of that one has some meat slices – coop salami tonight. Then 3 quarters of the other one is veg, whatever I have in or get. Tonight it was 5 mushrooms, half a red pepper, a red onion and some cherry tomatoes, all chopped up by Big who is pretty handy with a vegetable knife (thank you Montessori school). Also popped in a coop garlic baguette (at 3 for a pound I couldn’t resist) and there’s a meal that everyone enjoys at a very reasonable cost.
It does take a little while to prepare with all the kneading, rolling and chopping, but being able to control ingredients and make it suited to every member of the family makes it worthwhile 🙂
